Aquafaba mayonaise – creamy and thick. Dairy free. And so yummy!
Ingredients
- (A)
- Aquafaba (from 400ml can of chickpeas)
- Kala Namak/black salt 1/4 tsp (for egg taste)
- lemon juice 1T
- ACV 1.5tsp
- white vinegar 2tsp
- ground mustard 1/4tsp
- sugar (opt) / date/maple syrup 2tsp

- (B)
- oil ¾ -1 C (or apprx. 190ml)
(or soaked cashew ¾ C,
or ground pepitas(pumpkin seeds) ¾ C
or soaked (min. 1 hr) sunflower seeds ¾ C )
Steps
- Blend (A) fully with immersion blender; highest speed. Move blender up and down to incorporate air.
- Drip in (B)/oil slowly.
