Vegan Banana Bread. No eggs but does include sugar & salt.
Original Recipe from Connoisseurus Veg: The Best Vegan Banana Bread
Below is just my (adapted) short-hand version for myself.
Substitute or adj. qty according to personal preference
Ingredients
- banana (over ripe: mashed up) – 2 to 3
(A)
- Granulated sugar – 1/4C
- Brown sugar – 1/4C (tip: can used finely chopped dates)
- Oil – 1/4C
- Vanilla extract – 2tsp
(B)
- AP Flour – 2C
- Baking soda – 1tsp (sprinkle into flour)
- Cinnamon (ground) – 1tsp (sprinkle in)
- Salt – 1/2 tsp
(C) – Optionals
- Walnuts (chopped) &/or other nuts, raisins, chocolate chips, dessicated coconut, oats, etc

Steps (summary)
- preheat conventional oven: 175C/50mins
- mash up bananas in large mixing bowls
- Lightly grease loaf pan (tip: long strip of wax paper along center of pan’s length; with overhang at both ends. Will help with removal later.)
- Mix (A) well into bananas
- Add (B). Mix in well but do not over-mix (or it gluten will develop making bread hard). Batter will be thick.
- Fold in (C)
- Spoon into greased pan
- (Opt) lightly sprinkle top with brown sugar for crusty top
- Bake: 50 mins. Check with toothpick
- . Cool on track for minimum 15mins
Note: AF 165C/40mins but for Fillip, I probably need to halve ingredients
