Original Recipe from: Garam Masala’s Chicken Varattiyathe / Chicken Fry Kerala Style
Below is just my short-hand notes for myself.
Marinade
- ginger paste
- garlic paste
- green chillies – x1, finely chopped
- shallots
- chilly powder
- coriander powder
- garam masala powder
- pepper powder
- tumeric powder
- red colouring
- lime juice
- salt
• adjust chilli-ness as desired
Masala for Frying
- ginger paste
- garlic paste
- green small chillies – x3 whole
- onion – smallish wedges
- tomato – 1
- curry leaves
- Fry ginger, garlic, onions, chillies till aromatic and onions slightly transparent.
- Add tomatoes & curry leaves. Cook a bit the give tomatoes a mash.
- Add in marinated meat. Toss a bit. Lower heat. Cover. Still occasionally. Cook to desired dryness.
• No need to add water.
