Marinade
- 2T Chinese rice wine
- 1T cornflour
- 2T dark soy sauce
- 2tsp sesame oil
- ===
- chilli flakes
- chopped ginger
Final Ingredients
- 2pc dried citrus peel (soak, chop)
- spring onion (thinly sliced)
- sugar, salt
- dark soy sauce
- 1tsp soy sauce
Method
- marinate chicken, 1hr in fridge
- toss chicken in heated oiled wok. (1/2 cup oil?)
- Remove chicken. Drain oil, leave 1T
- High heat – chilli flakes + chopped ginger; 10 secs
- Add chicken back to wok

Tip:
- add mushrooms/champignons
- coriander for garnishing
