Malaysian Spicy Air Fried Chicken (Ayam Goreng Berempah)

Below is just my short-hand version for myself.
Substitute or adj. qty according to personal preference.
Dry: Finely Grind Spices Tog (for Masala)
- coriander seeds – 1T
- cumin seeds – 1tsp
- fennel seeds/powder – 1tsp
Paste: Blend/Process Tog (for Masala)
- galangal – 1T (chopped)
- garlic – 4 cloves (roughly chopped)
- lemongrass (1 stalk, roughly cut)
- shallots – 6pc
- some water
Masala/Marinate (3-12 hours)
- ground dry spices (coriander, cumin, fennel)
- chicken pieces
- paste (lemongrass, garlic, galangal)
- chilli powder – 1.5T
- corn flour – 1.5T
- curry leaves – handful
- curry powder – 1T
- egg x1
- salt – 1.5 tsp
- sugar – 1 tsp
- turmeric powder – 1tsp
For Frying
- oil
Steps (summary)
After marinating, lightly shallow fry in pan till outsides turn slightly crispy and golden brown.
Into airfryer, 160-180C for 5-10 mins. Check and adjust timing and heat according to needs.
