This oil is useful for adding flavour to stir fries. It is also flavoursome addition to sou sauce dippings, with our without chilli.
I am not listing quantities because I vary the amounts all the time.
A. Finely Chop/Food Process Together
- Ginger
- garlic
- scallion/spring onion/chives
Tip: can process spring onions separately. Blend but not into mush.
B. Later Additions
- More scallion/spring onion/chives – finely chop, to be added later
Steps
- Put (A) into heat proof largish container. Liberally salt/season (can also use nutritional yeast)
- Heat oil in small pot; hot not boiling though.
- fire off
- CAREFULLY pour hot oil onto (A). Will splatter so be careful.
- Then balance of spring onions
- cool and store in fridge
