Jackfruit Indian Curry; Kerala style. Wanted to try making curry with jackfruit. Only a low rating for first try. Though it could be that the can I had was pretty old. Might try again another time … but instead of boiling the jackfruit (from can) in turmeric water (as per video from Sanjeev), I might try seasoning and air frying them first.
Note to Self: photos will need to be updated. Unfortunately the jackfruit kind of “disappeared” in this photo. Plus I added brinjal tonight … which might be confusing, pictorially.

Substitute or adj. qty according to personal preference
Serves: 2-4
Ingredients
- jackfruit; drained from can
Masala Paste (A)
Fry lightly till fragrant
- coriander seeds – 1tsp
- cumin seeds – 1tsp
- cloves – 8-10
Masala Paste (B)
Into blender; tog with (A)
- dry chilli – 3-4pcs
- ginger; fresh – 1″
- garlic cloves – 8-10
- coconut flakes – 1/2C
- tamarind pulp – 1/2tsp
- H20 – 1/2C
Gravy
- coconut oil (opt) – 4tsp
- mustard seeds – 1tsp
- curry leaves – 20-25
- onion; chopped – 1C
- xx
- green chillies – 2
- tomato puree – 1C
- xxx
- nut milk/cream (opt)
Steps (summary)
- Lightly fry/saute ingredients for Gravy
- Add the 2 green chillies
- then add tomato puree
- Add jackfruit
- Masala Paste
- Seasoning to taste. Add (opt) nut milk.
