I didn’t know what Limoncello was till today. I have a bunch of (gifted) lemons and was looking for a way to use them. Then I came across limoncello and it sounds like it will be delish. So here goes!

Below is just my (adapted) short-hand version for myself.
Substitute or adj. qty according to personal preference
Ingredients
- lemons – 10
- vodka – 1L
- white sugar – 3C
- water – 4C
Steps (summary)
1) Zest lemon. Into large glass bottle.
2) Add vodka.
3) Cover loosely; infuse for 1wk.
4) 1wk later, boil the 3C of sugar and 4C water for 15 mins. Let it keep boiling but DO NOT STIR. Cool to room temp.
5) stir the vodka & lemon mixture into cooled, sugar syrup.
6) Strain into sealable bottle for aging.
6) Let it age for 2 wks.
After that, into the freezer to be served directly from there.
Note 12 Nov 2019: Well, I am drinking my first Limoncello. I can’t tell how close this brew is to the real Limoncello as I have never had one. But Pete says it is close and very drinkable. All I can say is … woooo, nice but it packs a punch!!!
22 Apr 2021: there is so much lemon zest left that i had to find a way to use them. Sugared lemon zests seems to be a popular way. But i decided to make Ground Lemon Pepper spice.
