Okara is a by-product of making soy milk and/or tofu. It is often discard. Which is a shame. It is more nutritious than soy milk or tofu!!!
Okara contains:
- soluble fiber
- non-soluble fiber
- protein
- calcium
- other minerals
There are many okara recipes on the net. I will try and post some as soon as I get round to using it.
