Just like with the salsa, this was a food item I had never tasted. Nor had I ever even heard of this term … till I came across the WFPBNO (Whole Food Plant Based No Oil) Challenge on Facebook. Apparently queso is some kind of Mexican cheese appetizer, dip, or side dish. This queso has no cheesy; totally vegan.

Below is just my (adapted) short-hand version for myself.
Substitute or adj. qty according to personal preference
Ingredients
- cashew nuts; raw, soaked overnight, drained – ¼ C
- salsa – ½ C
- red capsicum – ¼ C
- nutritional yeast – 2T
- tumeric powder – ¼ tsp
- black pepper
- Deliciou Nacho Cheese Seasoning (opt)

Steps (summary)
- Drain & rinse soaked cashews
- Combine everything in high speed blender
- Serve warm at room temp.
