This kimchi is easy and quick. Can be eaten same day! And yummy!
Ingredients – Veg etc
(All veg: mix with some salt. Rest min. 15minutes. Rinse. Squeeze out liquid)
- Chinese cabbage (normally main veg in kimchi)
- Optionals:
- Daikon radish (small squares
- Carrot (thinly sliced)
- Spring onions (1” length)
- scoby (thin strips. Do not salt etc.)
Chilli Mixture
(No exact measurements. I agak2 and do to taste.)
- Garlic (minced/crushed)
- Miso paste
- Korean hot pepper paste (gochujang)
- Fish sauce
- Soy sauce/liquid aminos
- Chilli flakes
- Sugar/vegan sweetener
- Optionals
- Fu yu (fermented bean curd)
Chill kimchi in fridge. Can be eaten immediately.
