Cold Soba or Zaru Soba is a most delightful Japanese dish especially on hot days. Hard to imagine it can be so tasty till you try it.
This is almost a vegan dish except for the bonito flakes used to make the dipping sauce. You can try substituting that with miso for a full vegan dish.

Below is just my (adapted) short-hand version for myself.
Substitute or adj. qty according to personal preference
Serves: 2
(A) Dipping Sauce (Mentsuyu)
- sake – 1/8 C or 1.5T
- Mirin – 1/4C
- Soy sauce – 1/4 C
- Dried seaweed/kelp
- Bonito flakes – 1/2 C

- shredded nori
- spring onions – chopped
- Wasabi (opt)
- Grated ginger (opt)
- Grated daikon (opt)
- Sesame seeds
- chilli flakes

Steps for making the Dipping Sauce (summary)
- Bring (A) to boil. Simmer over low heat, 5 mins.
- Heat off. Sit for 15 mins.
- Strain. Cool off
This is concentrated so add water to taste.
Cook the cold soba noodles according to package instructions.
